BDA Lamb Shepherd’s Pie
Ingredients:
2 lbs. BDA Sweet Potatoes, washed, peeled and chopped.
2 lbs. BDA Ground Sheep
1 onion, diced
4 BDA carrots, sliced
2 ribs of celery, sliced
4 cloves of garlic, minced
Salt and pepper to taste
4 Tbs. butter
1 tsp. garlic powder
½ tsp. Paprika
1 sprig of rosemary
2 sprigs of thyme
1 Tbs. olive oil
1 cup broth
3 Tbs. tomato paste
1 cup of frozen peas
1 cup of frozen corn
*optional 2 cup cheese*
Instructions:
First, scrub those sweet potatoes clean! Boil BDA sweet potatoes in a saucepan with just enough water to cover the potatoes. Cook until the potatoes are tender which should take about 10 min.
Drain and mash the sweet potatoes with salt, pepper, paprika, garlic powder, and butter.
In an oiled sauce pan on the stovetop, sauté the onions and garlic.
Add the BDA ground lamb. Cook and crumble the meat on a medium-high heat and make sure to drain the grease.
Stir in the tomato paste, salt and pepper, and herbs, broth and reduce heat to simmer. Stir in the peas and carrots.
Spread the meat and vegetable mixture in the bottom of a casserole dish and add the mashed sweet potatoes on top, spreading them evenly.
Bake the shepherd’s pie at 375 degrees for about 25-30 minutes or until the potatoes begin to brown. After baking, you can add 2 cups of cheese to the top.
