Herby Green Goddess Salad Dressing - Recipe Challenge Winner!
Ellary Draper’s Herby Green Goddess Salad Dressing
Ingredients:
1 cup Greek yogurt
1/2 cup mayonnaise
1 lemon, zested and juiced
2 small garlic cloves, microplaned/grated
1 bunch scallions
1 bunch dill
1 bunch parsley
Splash of buttermilk or cider vinegar (optional)
Salt and pepper
Instructions:
Combine all ingredients in a blender, food processor, or jar compatible with an immersion blender.
Blend until smooth
Use as a salad dressing or dip for vegetables
Recommended salad:
Butter lettuce, sliced radishes, sliced avocado and dressing.
