Flavors of Fall Salad

Ingredients:

Dressing

  • 3 Tbsp olive oil

  • 2 Tbs apple cider vinegar

  • 1 tsp spicy mustard

  • 1 Tbs lemon juice

  • 2 cloves of garlic, chopped


Instructions:

  1. Start off with giving your BDA sweet potatoes a good scrub. Dice and drizzle with oil, then season with salt and pepper before roasting at 400 degrees until tender, which will be about 30 minutes.

  2. While those are baking, wash the greens and add to the bowl. Dice the avocado and add to the salad along with cranberries, pecans and goat cheese.

  3. In a separate bowl mix together the salad dressing.

  4. Add the cooked sweet potatoes and drizzle with as much dressing as you want.

  5. Toss, serve and enjoy!
