Collard Greens - Recipe Challenge Runner-Up #1
Mike & Dana Bellsouth’s Collard Greens
Ingredients:
12 cups chopped collard greens (3-4 bunches)
16 oz chicken broth or bone broth
1 Tbs. red pepper flakes
1 Tbs. light brown sugar
1 yellow onion, diced
5 cloves chopped garlic
2 Tbs. olive oil
2 Tbs. bacon grease
Salt and pepper to taste
Instructions:
Heat Dutch Oven on medium high heat.
Add olive oil and bacon grease to the hot pan. Immediately add diced onion and chopped garlic and cook until clear.
Chop greens into 1 inch wide ribbons and add to onions and garlic while cooking.
Add chicken broth, red pepper, brown sugar and stir to combine. Cook covered on low heat until greens are fully wilted - 30 minutes minimum.
Longer cooking up to 90 minutes will help flavors meld together better. Taste several times and adjust brown sugar, red pepper flakes, salt and pepper to taste. Delicious without but you can add ham hock and bacon to make a meatier dish.
